Don't do this on any bike that's not a sportsbike because footpegs are higher in sportsbikes so they don't touch the ground when leaning like this. Also, foot tip on the footpeg, not heel, because your foot will will touch the ground if it's positioned in the conventional way.

You welcome dude, By lean angle, I mean especially the bike's leaning angle. Like a blind person using the hands to feel the way around the house. That's more less how it works, by probing the ground's proximity. When you mechanize it, it's very useful. But it also helps, like a pendulum to shift a little more weight into the center of the curve. And you need that on a track. Shifting your weight on the bike is always good for safety both on track and on the road. Have great rides! ;)

Yeah, I've ridden a track here in Japan on my cruiser, all the rubber in the turns makes the track super sticky. The roads are slick in contrast, I don't know if I would lean that hard hehe. So it's for reference and control on your lean angle, eh? Good to know. I'm going to probably get a gixxer once I get back to the states and sign up for some track days once I'm comfortable on a sport bike. Thanks for the info!

putting your knee down, is good when you're leaning to a level in which you need to have a reference of your leaning angle to control it. But it's dangerous to lean too much on the road because besides the asphalt is different than on a track, it has slippery stuff on it (oil, etc) etc... And also if your tyres slide, you can either slide under an oncoming truck, or onto a rail or over a ravine etc...

I understand the benefits of wanting to shift your weight over into a turn to keep the bike upright, but what does dragging the knee gain you? Is it a positional thing, just a kind of physical interaction with the road so you feel the lean angle directly, to avoid rear tires leaving the ground and a low side?

I did proddie racing on a 250 lc years ago then a tz 250 had a handful of race wins and finished top 5 regular and i never got my knee down. even now on track days on my zx7r i still pass loads of knee down posers on bigger faster better specced bikes and i dont wear me knee out either.

if you get after market rearsets, you can adjust them higher, then your knee will stick out more.
